We did a combo snorkel, kayak cruise in Key West a few years go on this ship. No where near as big as your pic, but it was 72' They let the participants help with the sails and a few steered the ship too. It was very quiet under sail and the breeze we felt crawling out of port on engine power seemed to go neutral, as we moved at about the same speed. The anemometer indicated we got up to 7 knots for a short time before stopping at a snorkeling area.
