I am 99% sure all came with 4 wheel discs. Plus research on Cars.com confirms that.
My 1996 Camaro V6 base model did have rear drums, but in 1998 when they changed the front end and a few other things they went to 4 wheel discs.

I bought a new Camaro is 1997 and that also had standard 4 wheel disc brakes.
.... so...
ALL 2000 Camaros came with 4 wheel disc brakes?
.... Including ALL the 6 cylinder cars?
...I would figure that the v8 cars like SS or Z28 would...
.... but did ALL the 6 cylinder cars come with 4 wheel disc brakes?

Yes all 2000 Camaros even base model V6 came standard with 4 wheel disc brakes. Every single Camaro 1998 and newer came standard with 4 wheel disc brakes.
There is a message board specifically for V6 Camaros (mostly 4th Gen.) if you want to ask there to double check.
