My understanding is that in Canada, headrests didn't become mandatory until January 1, 1969.

No - that's Lordstown.
Most "Pontiac" plants assembled multiple GM Brands (the exception being the "home" plant in Pontiac Michigan).
It is still done that way today (that is, multiple GM brands and models going down the same line).

I have a "favorite" saved for CRG but it takes me directly to the production process; I don't see a forum anywhere.
By the way, my career parallels JohnZ's, except I started about 10 years later and worked my way up in the Truck organization (I'm still working for Truck Engineering).

Dad is the one that adapted this Olds fuel injection intake onto a Pontiac engine for Dick Jesse's '65 altered wheelbase car. They were probably made in the Chevrolet Die Room at Chevy Flint Manufacturing.

The paint on that GTO has been bad for as long as I can remember. It's like they shot it over the old original laquer and the repaint has shrunk into the laquer checking.
Far be it from me, though, to be judgemental about paint jobs on GTOs. The original paint on my car is pretty bad and is quite spidered on the horizontal surfaces.
In defense GFV&HFM they have changed the display around a little bit. They like to mix things up every 40 or 50 years to keep things fresh:
