Default Clutch binding

Quick question for you car "doctors". The clutch pedal on my '69 BB Pace Car feels like it is binding upon engagement of the clutch. When I engage the clutch, the pedal feels like it comes up, hesitates, comes up, hesitates, etc. - not a smooth engagement at all. I have rebuilt the Z bar & greased the pivot points. When I push the clutch pedal in, it feels smooth. The "jerking" problem only happens when the engine is running.

My plan is to pull the trans next weekend - thinking that the throw out bearing is binding. Any additional thoughts on the source of the problem would be appreciated. Also, might as well replace the clutch & pressure plate while I'm at it. This isn't a race car (stock 396/325) - recommendations for clutch & pressure plate?
