A lot of that depends on your use of the car. On the street a Crossram is a POS to drive much. Sucks gas and is a stumble bum unless you leave hard and/or have a low geared rearend. (4:56 or 4:88) You will not want to leave home with out your credit card.
The cams you are refering to are not that bad on the street as long as you are not trying to run a tall 3:xx rear gear. I would not like to drive it with anything higher than a 3:73.
If you do, you will have to have a good clutch. In my opinion there is not that much difference between 11-1 or 12-1 pistons. Both will need race gas. The right cam can make you or break you. There is not much difference between them as far as the average guy just to listen to it run. Both will sound healthy.
I would suggest that you stick with a low end powercurve on the cam if you are going to drive it much. You will have more fun and it will be actually faster on the street. Not to mention less maintence with the drivetrain. (setting the valves often and breaking pushrods)
The wilder the cam the harder it is to drive and lets face it how often do you plan on reving it to 8,500 rpm's on the street?
