Very difficult to guess value from that description. Options mean a lot. Also, "restorable" can mean the car could cost $10K to do or $25K+ to do. Between '59 & '64, '61s are the most expensive to restore today. There are less repro parts available for them than the later years, but they are more popular than the '59s & '60s, so the cost of original parts is more.
