Default '69 Camaro Questions

I've been reading up on diferentiating between the different VINs, X-codes and what not and I'm still a bit confused. What determines that a car is 'matching numbers'? How can I tell if my car is a 327/210hp or the 327/275hp? Is the easiest way by decoding the Protect-O-Plate?

Also, in pre-'69 Camaros (ie '67 and '68) is it true that nothing more than a 'date correct' match can be made for the engine/tranny? I've been trying to read up on www.camaros.org, but the site is poorly layed out and confusing. Can anyone help by answering and/or giving me another source?
