Try instrument specialties. I just got lacquer in dark green for my 70 Z/28 project dashboard from them. Great guys, pleasure to deal with.

As far as paint is concerned you will not be able to buy something off the shelf. Typically one can take a piece of the car that needs to be matched or the car itself to either a willing body shop or a paint supply store. The color and most importantly the sheen of the paint can then be tailored to the vehicle.

Default Dash paint

Search for a paint outlet that has a SEM mixing system, bring your old ash cover or glove box door to match.

I bought dash paint to repaint my '63 Impala dash (teal) and my '69 Nova dash (black) from my autobody supply store. They looked up the codes in the old GM Ditzler books and then custom mixed the exact color. They were able to do that with the codes from the old books and never had to have any example of the color to match to, and the paint they gave me was a perfect match when sprayed.

The Willow run Novas had the dash painted in the Fisher plant, and the glove/ash tray door painted at the GM side. I've seen many that didn't match exactly.
