Has anyone used metal bonding adhesives for panel replacements, etc.? Are adhesives better in some situations then others or should I just weld it (my welding skills are not the best!).

If you are worried about warping the metal, or buring through, than bonding is a definite option. Honestly, I haven't heard many bad things about it. I am not sure how disasterous this proceedure can be for a beginner though.
